I would like to see bypassed zones highlighted when the system is armed, say with a white background? Right now below "Armed" it says something like "Zones Bypassed" but it does not tell me _which_ zones are bypassed.

Yes, they should be wired in parallel. I wouldn't try to leach power off the EVL board; I have no idea how much current the onboard regulators can support. 12v DC is available from the keypad and/or Aux buses however, so a 12v->5v regulator should be all you need.
