What is the maximum length (i.e. how many characters) of a zone label that will be transmitted by an Eyez-On Envisalink 2DS or 3?

Messages are sent from these using SMS text and email.

I believe you can enter up to 255 characters but they are truncated in alert messages. Probably around 100 characters. They are sent as email-to-SMS messages so your carrier will carry them over to two messages if they are too long.
